White Bean & Tuna Salad

Adapted from Bon Appétit, this easy recipe makes a healthy, tasty week day dinner when you don’t have time for a lot of fuss and bother. It’s a quicker version of the classic salade nicoise.

ingredients

  • 1/2 small head radicchio lettuce, or good red cabbage , cored and leaves torn or chopped coarsely
  • 1 Can (14 oz) large white or cannellini beans , drained and rinsed
  • 3 Large spoons ChowGuys salad dressing, or good vinagrette
  • 2 Sprigs Fresh basil or parsley , minced
  • 1 Stalk Celery , sliced
  • 2 Scallions , sliced
  • 1 small can (8 oz.) good quality white albacore tuna in olive oil , drained and broken into large pieces
  • Pinch kosher salt and black pepper

prep / directions

Put radicchio or cabbage pieces in a large bowl. Add cannellini beans, celery, scallions and tuna pieces. If you have some imported olives, they’ll make a good addition. Sprinkle with the salt and pepper, add the salad dressing and minced parsley or basil and toss everything to coat well. Serve on a platter or individual plates with lemon wedges and good crusty bread.
