Heat your grill and soak 4 wooden skewers in water for a few minutes. In a large bowl, whisk together the marinade (recipe) and herbs. Add all the veggies so they’re lightly coated with the marinade. Then thread the vegetable chunks, alternating them so each skewer contains all the veggies. Oil the grill and place the skewers around the edge of the grill rack and cover. Turn the skewers so all sides are charred slightly and vegetables are soft, 8-10 minutes in total. Serve with your grilled meat or fish.
