Vegetable Kabobs

This is a great side to go with any of the grilled meats or fish, and will save precious time since you can cook it all on the grill at the same time.

ingredients

  • 1 Small eggplant , trimmed, sliced and cut into cubes
  • 1 zucchini or yellow squash , trimmed, sliced and cut into cubes
  • 1 Red onion , trimmed and cut into cubes or wedges
  • 1 Red or Yellow bell pepper , trimmed, seeded and cut into pieces
  • 8 cremini or white button mushrooms , trimmed
  • Chowguys marinade for fish & chicken , chopped fresh basil or parsley added

prep / directions

Heat your grill and soak 4 wooden skewers in water for a few minutes. In a large bowl, whisk together the marinade (recipe) and herbs. Add all the veggies so they’re lightly coated with the marinade. Then thread the vegetable chunks, alternating them so each skewer contains all the veggies.
Oil the grill and place the skewers around the edge of the grill rack and cover. Turn the skewers so all sides are charred slightly and vegetables are soft, 8-10 minutes in total. Serve with your grilled meat or fish.
