Tasty Chow Mein with Pork & Shrimp

This is a classic stir-fry combining Chinese-style noodles with vegetables and any combination of chicken, pork or shellfish. Once you have the ingredients prepped, it’ll only take you 10 minutes or so to stir up a healthy, delicious dinner that’s perfect any night of the week.

ingredients

  • 6 Ounces lo mein or Chinese noodles
  • Sesame or hot chili oil to lightly coat a wok or large fry pan
  • 2 Cloves Garlic , minced
  • 1 boneless pork chop, or boneless chicken cutlet , sliced into thin strips
  • 12 shrimp (or rock shrimp) , deveined, cleaned and shelled
  • 6 shitake or button mushrooms , trimmed and sliced
  • 1/2 Red bell pepper , trimmed, cleaned and thinly sliced
  • 1 Large handful cabbage , finely shredded as in coleslaw
  • 1 Head Broccoli or broccolini , trimmed and sliced
  • 1 Small Can bamboo shoots
  • 4 Large spoons Soy sauce , or to taste
  • 2 Large spoons Mirin or rice wine
  • 3 Scallions , cleaned and sliced into one inch pieces

prep / directions

Prep all the meat, shellfish and vegetable ingredients so they’re ready to stir-fry. Cook the noodles according to the package directions, usually only a few minutes, and set aside. Heat the large pan under medium heat and add the sesame or hot chili oil. Quickly cook the garlic and thinly sliced meat and shellfish for a minute or two, stirring constantly. Add the shredded cabbage, mushrooms, pepper, and broccoli, continuing to stir for a few more minutes until slightly wilted. Then add the bamboo shoots, soy sauce and rice wine, mixing all ingredients together for another minute or two. Finally add the cooked noodles and the chopped scallion and mix thoroughly. Serve piping hot over rice if you wish.
