Spicy Grilled Corn

Fresh corn’s abundant in later summer, and it’s a perfect time to spice up corn on the cob. We like to grill corn for a change of pace, but you can also add the same spice to boiled, buttered corn if your grill is under repair.

ingredients

  • 4 Ears fresh corn , stalks and silk removed
  • 1 Large spoon Extra virgin olive oil
  • 1 Spoon Chili powder
  • 1 Small spoon coriander
  • 1 Pinch Cayenne pepper
  • Generous pinch Kosher salt
  • Generous pinch Black Pepper

prep / directions

Preheat the grill. In a small bowl, whisk all the spices together with the olive oil. Brush this mixture on each ear of corn and place on edge of the grill where the heat is lowest. Cover the grill and cook for 5 to 6 minutes, rotating the corn so it grills evenly.
