Spaghetti with Fresh Tomato Sauce

This is one of our go-to dishes when the garden is full of ripe tomatoes and fresh basil is plentiful. The whole thing won’t take more than half an hour to make and is all you need for a delicious dinner alongside a nice glass of wine!

ingredients

  • 1/2 package Spaghetti or slightly more
  • 2 Large spoons Extra virgin olive oil , or enough to coat pan
  • 1 dozen Cherry tomato , cut in half, or 4 large tomatoes, peeled and roughly chopped
  • 1 clove garlic , peeled and minced
  • Good pinch hot red pepper flakes , or 1 hot cherry pepper, chopped
  • Small bunch Fresh basil leaves , minced
  • kosher salt and black pepper
  • Freshly grated Parmesan cheese , or spoon of mascarpone

prep / directions

Fill a large pot with water and bring to a boil. Add a generous pinch of salt and the spaghetti. Stir to break up the pieces and cook until al dente or according to package instructions. While spaghetti is cooking, coat your pan with the oil and sauté the chopped tomatoes, garlic and pepper flakes under medium-low heat for 5-10 minutes, or until the tomatoes start to break down. Add salt and fresh pepper and stir. Drain the pasta, reserving ½ cup of water for finishing if the sauce is too dry. Mix the hot spaghetti with the fresh tomato sauce and simmer for a minute or so. Turn the heat off, add basil, grated cheese or mascarpone and mix well. Serve immediately.
