Shrimp & Orzo Salad

This is a refreshing salad that has enough substance to make a satisfying meal. Orzo is the Mediterranean pasta used daily by Greeks, Turks and Italians and is available in most American food stores. It’s good to keep some orzo in the pantry along with pasta and rice.

ingredients

  • 1 Cup Orzo
  • 10 Medium Shrimp , already cooked, or raw but cleaned and deveined shrimp
  • 1/2 Red bell pepper , seeded and cut into dice-sized pieces
  • 4 Scallions , sliced on the diagonal
  • 2 Sprigs Fresh dill , finely chopped, or dash of dry dill
  • Several large leaves Fresh lettuce
  • 4 Spoons ChowGuys salad dressing mixed with 1 spoon of mayonnaise and juice of ½ lemon

prep / directions

Mix the salad dressing at the bottom of a salad bowl. Bring a pot of salted water to a boil. If your shrimp are raw, pop them into the water for 1-2 minutes until they turn pink. Quickly remove with a slotted spoon. Add the orzo to the boiling water and cook like pasta for about 10-12 minutes, tasting to make sure it is done. Drain the orzo and run under cold water in a sieve to cool it down. Add the cooked shrimp, orzo, red bell pepper, scallion and chopped dill to the bowl and mix well. Serve orzo and shrimp salad on the plate or on a lettuce leaf if you want to dress it up.
