Shrimp Creole

A family adaptation of the classic New Orleans dish, this recipe is perfect for a group of friends. You can make it ahead of time and just heat before dinner. If you have leftovers, you’ll be a lucky fellow.

ingredients

  • Olive oil to coat the bottom of a large skillet
  • 1 Large Yellow onion , chopped
  • 1 Red or Green bell pepper , seeded and chopped coarsely
  • 6 Okra , trimmed and sliced (optional but nice to have)
  • 2 Cloves Garlic , minced
  • Generous dash Cajun spice
  • 1/2 Glass White wine (optional)
  • 1 Can (28 oz) Diced tomatoes
  • Pinch kosher salt and black pepper
  • 20 Medium Raw shrimp , cleaned
  • 2 Scallions

prep / directions

Heat oil in the sauté pan under medium heat, and add the chopped onion, bell pepper and okra, stirring for 6-8 minutes until soft. Add garlic for an additional I minute. Stir in the Cajun spice and/or cayenne pepper. If using white wine, add to the pan and turn the heat up to medium high so the wine simmers a few minutes. Then pour in the tomatoes, the salt and pepper to bring all to a boil. Turn the heat back down to medium and simmer lightly for another 10-12 minutes. Mix in the shrimp and continue simmering another 5 minutes until they turn pink in color. Serve the shrimp Creole over white rice and garnish with the chopped scallion or parsley.
