Roasted Carrots with Ginger

This super simple recipe plays on the medicinal wonders of the carrot by adding fresh ginger to bring out its natural sweetness and flavor. A perfect accompaniment to chicken or grilled meats.

ingredients

  • 3 Carrots , scrapped and trimmed, and sliced in half lengthwise
  • 1 Small piece Fresh ginger , peeled and grated, or spoon of dry ginger
  • Extra virgin olive oil to coat carrots
  • Generous pinch Kosher salt
  • Generous pinch Black Pepper

prep / directions

Preheat oven to 375 degrees. Place carrots on a baking sheet or ovenproof casserole. Pour enough olive oil to coat and toss well with your hands. Sprinkle with the grated ginger, salt and pepper and bake in the oven for about 20-25 minutes until the carrots are slightly browned and crisp tender.
