Roasted Broccoli

This healthy side dish is a lot easier than pie because you can stick it in the oven and forget about it for 25-30 minutes while you create the main event. We like to add a little grated parmesan near the end to add a little extra zip.


  • 1 Large Broccoli , washed, stems trimmed, and cut into pieces or florets
  • Extra virgin olive oil to coat broccoli florets
  • 1 Clove Garlic , peeled and sliced
  • Generous pinch Kosher salt
  • Generous pinch Black Pepper
  • Sprinkle of grated parmesan cheese, if desired

prep / directions

Preheat the oven to 375 degrees. Prepare the broccoli and place florets and garlic slices on a baking sheet or oven proof casserole. Pour enough olive oil to coat the broccoli, toss with your hands and lay flat on the baking sheet with as much room as possible. Sprinkle with the salt and pepper and place in the oven, baking for about 30 minutes until the broccoli is slightly browned and crisp tender. Sprinkle with the grated parmesan, if you want, for the last few minutes in the oven and serve.
