Pork Lo Mein

This is another flexible dish that makes good use of leftover pork roast. If you want to start from scratch, you can also use ground pork, or even pork sausages stripped of their casing.

ingredients

  • Good pinch Kosher salt
  • Dried lo mein noodles or thin spaghettini (lo mein is usually available in the Asian food section)
  • Asian sesame oil to coat bottom of a skillet or pan
  • 1/2 Pound Ground pork
  • 2 Cloves Garlic , minced
  • 1 Large Carrot , halved and thinly sliced crosswise
  • 1 Cup Chicken broth or stock
  • 3 Spoons Soy sauce
  • 3 Scallions , thinly sliced

prep / directions

Cook the noodles in boiling, salted water according to package instructions. Warm the sesame oil in the skillet over medium heat and cook the ground pork (if using), along with the garlic and carrots, stirring for 3-4 minutes until cooked. Add chicken broth and soy sauce, turn up the heat briefly to bring the mixture to a light boil. Reduce heat to medium and simmer for 2-3 minutes more. Add the noodles to the skillet and mix everything well. Add in the chopped scallions, toss and serve hot.
