Mediterranean Salad

We’ve adapted a classic salad you find in countries like Greece and Turkey to incorporate shrimp or chicken. This ChowGuys salad makes a healthy, satisfying meal and will keep overnight in the fridge if you want to make a little extra for the next night.

ingredients

  • 1 Small Red onion , cut in half and then sliced thin
  • 8 Imported green and black olives , pitted and cut in half
  • 1 Small English or Persian cucumber (without seeds), trimmed and sliced into thin cubes (can use regular cucumber but cut down the middle lengthwise, remove seeds with a spoon and slice into cubes)
  • 1 Small piece Fresh feta cheese , cut into pieces or crumbled
  • 1 Head Romaine lettuce , stripped of outer leaves and sliced into pieces
  • 1 Large spoon Bottled capers , drained
  • 1 Cooked chicken breast , sliced into cubes, or 10 cooked shrimp, cut in half and without shells
  • 1 Sprig Fresh mint , leaves coarsely chopped or shredded by hand
  • Pinch Dry oregano

prep / directions

Put all ingredients into a large salad bowl. Add salad dressing, mix well and serve with toasted pita or crusty bread.
