Tomatoes & Mozzarella

This is a perfect side dish or salad for late summer when real tomatoes are available in the garden or at farmer’s markets around the country. Fresh mozzarella is best; if you see any buffalo mozzarella, grab it because it’s light as a cloud and tastes like heaven.

ingredients

  • 2 Large Fresh tomatoes cut into thick slices about ½ inch each
  • 1 ball fresh mozzarella cut into slices
  • Generous drizzle Extra virgin olive oil Generous drizzle extra virgin olive oil
  • 1/2 Lemon juice
  • Generous pinch Kosher salt
  • Generous pinch Black Pepper
  • Fresh basil leaves

prep / directions

Select a small serving platter or large plate for the tomatoes and mozzarella. Squeeze the lemon juice over the surface, then arrange tomato slices so they fill the plate. Sprinkle tomatoes with the kosher salt and place a slice of mozzarella on top of each tomato. Now drizzle olive oil over the mozzarella, sprinkle with ground pepper and the chopped basil. If you let the tomatoes and mozzarella sit for at least 20 minutes all the juices will come together to give you an even tastier side dish.
