Shrimp Salad

This is another meal-size salad that’s a nice change of pace for dinner. We dice a lot of vegetables and bind the cooked pieces of shrimp with a spicy dressing spiked with dill. We love to eat shrimp salad with toasty pita or French bread.

ingredients

  • 3 Large spoons Mayonnaise
  • 1 Spoon Dijon mustard
  • 1 Squeeze or dollop Heinz ketchup
  • 1/2 Lemon juice
  • Dash Tabasco sauce
  • 1 Sprig Fresh dill , chopped, or pinch of dry
  • 1/2 Red onion , finely diced
  • 1 Stalk Celery , finely diced
  • 1/2 Cucumber , seeded and diced
  • 1/2 Red bell pepper , seeded and diced
  • 10 Cooked shrimp , tails trimmed and cut in half
  • 4 Boston lettuce leaves
  • 1 Ripe tomato , cut in wedges

prep / directions

In the salad bowl, whisk together the mayonnaise, mustard, ketchup, lemon juice, Tabasco sauce, salt and pepper. Add all the diced vegetables and the shrimp and mix well. Serve the shrimp salad on the lettuce leaves and surround with the tomato wedges.
