Roast Fingerling Potatoes & Fennel

This is a great side dish for just about any grilled food, either meat or fish. We include a handful of green beans at the end to add a little fresh color.

ingredients

  • 6 fingerling potatoes , scrubbed, trimmed and cut in half lengthwise
  • 1 Bulb of fennel , trimmed of fronds and tough core, and cut into wedges
  • 1 Handful green beans , ends trimmed
  • 2 Large spoons Extra virgin olive oil or enough to coat vegetables
  • Generous pinch Kosher salt
  • Generous pinch Black Pepper

prep / directions

Preheat the oven to 400 degrees. Mix the fingerling potatoes and fennel wedges with the olive oil, salt and pepper in a roasting pan and put in the oven for 30 minutes. 
Remove and mix in the green beans, stirring everything together. Roast for another 10 minutes, remove and serve.
