Preheat the oven to 375 degrees Lightly coat a medium pan or skillet with olive oil and cook the onion, garlic, thyme, salt and pepper over medium heat until soft, about 10 minutes. Add the Worcestershire sauce, chicken stock and tomato paste and mix thoroughly. Let cool for at least five minutes. Combine ground turkey, bread crumbs, beaten egg, parsley and cooked onion mixture in a large bowl. Gently mix all the ingredients together, then place in a casserole, baking pan or sheet. Shape the mixture with your hands into a rectangular loaf and spread the ketchup evenly over the top and sides. Bake in the oven for about 1 ½ hours and serve in thick slices, with a green vegetable or simple salad.
