Mighty Meatloaf

This is a healthier but absolutely delicious version of classic meatloaf using fresh ground turkey. Of course you can also use ground beef or a combination of ground beef, pork and veal which many stores sell as “meatloaf mix.” Leftovers make a fantastic sandwich the next day.

ingredients

  • 1 Large Yellow onion , finely chopped
  • 1 Clove Garlic , minced
  • Olive oil to lightly coat bottom of the pan
  • Generous pinch Dry thyme
  • Generous pinch fresh parsley , minced
  • 3 or 4 good dashes Worcestershire sauce
  • 1/4 Cup Chicken or Vegetable stock
  • 2 Spoons Tomato paste , canned or from a tube
  • 2 1/2 Pounds Turkey breast
  • 1/2 Cup Bread crumbs
  • 1 Large Egg (or 2 small eggs) beaten
  • 1/2 Cup Ketchup

Preheat the oven to 375 degrees
Lightly coat a medium pan or skillet with olive oil and cook the onion, garlic, thyme, salt and pepper over medium heat until soft, about 10 minutes. Add the Worcestershire sauce, chicken stock and tomato paste and mix thoroughly. Let cool for at least five minutes.
Combine ground turkey, bread crumbs, beaten egg, parsley and cooked onion mixture in a large bowl. Gently mix all the ingredients together, then place in a casserole, baking pan or sheet. Shape the mixture with your hands into a rectangular loaf and spread the ketchup evenly over the top and sides. Bake in the oven for about 1 ½ hours and serve in thick slices, with a green vegetable or simple salad.
