Lemon Ginger Chicken

This is a quick dish that’s perfect for your wok or deep skillet. It goes beautifully with white rice or jasmine rice.

ingredients

  • Peanut or other vegetable oil to lightly coat the wok or skillet
  • 2 boneless skinless chicken breasts , thinly sliced
  • Small piece Fresh ginger , peeled and thinly sliced
  • 1 Clove Garlic , thinly sliced
  • 1 Medium head Broccoli or broccolini , cut into florets or pieces
  • 4 Dashes Soy or oyster sauce
  • 1 Spoon Honey or maple syrup
  • 1/2 Lemon , thinly sliced
  • 3 Scallions , chopped

prep / directions

Heat the oil in the wok or skillet over medium high heat. Add the chicken pieces, ginger and garlic, stirring for several minutes until chicken loses its raw color. Add the broccoli, soy or oyster sauce, honey, lemon slices and scallion, stirring for several more minutes until the broccoli is crisp tender. Serve the lemon chicken with simple white rice or jasmine rice, cooked according to the package instructions.
