Grilled Jerk Chicken

This is a fun dish because it’s extra spicy and tailor made for summer grilling. If you can’t find a good prepared jerk spice or marinade in the store, you can make our version from scratch. Good eating, Mon!

ingredients

  • 1 Whole Chicken cut into pieces or 4 breasts if you prefer
  • 2 Large spoons Vegetable oil
  • 1/2 Lemon juice
  • 2 scotch bonnet or habanero chilies , stemmed, seeded and coarsely chopped
  • 2 Cloves Garlic , minced
  • 1 Large spoon Brown sugar
  • 1 Small spoon Fresh ginger minced and peeled
  • 1 Sprig Fresh thyme , or small spoon of dry thyme
  • 1 Small spoon Allspice
  • Generous pinch Kosher salt
  • Generous pinch Black Pepper
  • 1 Small spoon white wine vinegar

prep / directions

Puree the vegetable oil and all the ingredients in a food processor or blender until smooth. Arrange the chicken pieces in a pan or platter and pour the marinade over the chicken, making sure it gets into every nook and cranny. Cover and refrigerate for at least 30 minutes. Preheat the grill.   Cook the chicken pieces on the grill for about 30 minutes, turning half way so they’re cooked thorough. Remove chicken from the grill, cover again and let rest for 5 to 10 more minutes until everyone is begging for dinner. Jerk chicken goes beautifully with grilled corn or roasted broccoli.
